All pork products labeled as “ham” undergo curing with a nitrate solution, resulting in their distinctive pink hue and wonderfully tender texture. Additionally, they are pre-smoked, often using apple or hickory wood. The type of wood used will influence the smoke flavor of your ham, with hickory typically imparting a stronger smoky taste compared to apple.

Why it is called Twice Smoked Ham?

This is Because ham is already pre-cured and smoked, what we’re preparing is known as a twice-smoked or double-smoked ham. Some readers may worry that twice smoking could result in an overly smoky taste, but in my experience, this isn’t the case. The method for this recipe is carefully crafted to introduce just the right amount of smoke flavor while enhancing the ham’s moisture content and creating a delightful crust on the outer edges.

 

Ingredients and Equipment Needed for Twice Smoked Ham Preparation

  • 2 cups creamy salad dressing (such as Miracle Whip®)
  • 1 (8 ounce) jar sweet pickle relish
  • 1 tablespoon prepared mustard
  • 1 teaspoon freshly ground black pepper
  • 1 pinch salt, or to taste
  • 3 pounds smoked ham, cut into chunks
  • 6 hard-cooked eggs
  • 6 green onions, chopped
  • 1 small green bell pepper, diced
  • 3 stalks celery, diced

Steps Included

Step 1: Mix together creamy salad dressing, sweet pickle relish, mustard, black pepper, and salt in a large bowl until well combined.

Step 2: Using a food grinder, grind smoked ham, hard-cooked eggs, green onions, green bell pepper, and celery into a bowl. As you work, spoon tablespoons of the salad dressing mixture into the grinder to provide moisture.

Step 3: Mix the ham mixture thoroughly with the remaining salad dressing mixture until well combined. Store the mixture covered in the refrigerator until it’s time to serve.
